Creamy Cucumber Salad Recipe

This Creamy Cucumber Salad is just the right mix of healthy veggies and delicious flavor. This easy cucumber salad recipe (cucumbers, radishes, and apples) features a tasty cucumber salad dressing made with mayo and apple cider vinegar. It's a fresh and simple salad perfect for any occasion!

Ingredients

  • 1 large cucumber sliced
  • 8 red radishes thinly sliced
  • 2 Granny Smith apples sliced
  • ¼ cup mayonnaise store-bought or homemade
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lemon juice from 1 lemon
  • cup minced fresh parsley
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • In a large bowl, toss together the cucumber, radishes, and apples.

  • In a separate small bowl, whisk together the mayonnaise, vinegar, lemon juice, parsley, and salt and pepper.

  • Pour the dressing on top of the cucumber mixture and toss until fully combined.

Notes

  • You can peel the cucumbers or leave the skin on - the choice is yours!
  • To keep the salad from getting watery, you can place the cucumber slices in a colander and sprinkle them with salt. Let sit for about 15-30 minutes before using.
Storage: Store creamy cucumber salad in an airtight container in the refrigerator for up to 3 days.
