- 1 large cucumber sliced
- 8 red radishes thinly sliced
- 2 Granny Smith apples sliced
- ¼ cup mayonnaise store-bought or homemade
- 2 tablespoons apple cider vinegar
- 2 tablespoons fresh lemon juice from 1 lemon
- ⅛ cup minced fresh parsley
- Kosher salt and freshly ground black pepper to taste
In a large bowl, toss together the cucumber, radishes, and apples.

In a separate small bowl, whisk together the mayonnaise, vinegar, lemon juice, parsley, and salt and pepper.
