Preheat air fryer to 400°F for 5 minutes.
Wash and scrub the potatoes and dry thoroughly. On a cutting board, cut each potato in half lengthwise. Cut in half again, and then once more for a total of 8 wedges.
3 Russet or Yukon Gold potatoes
Place the potato wedges into a large bowl. Drizzle with olive oil and toss to coat evenly.

Add the spices and mix until evenly combined.
½ teaspoon kosher salt, ½ teaspoon garlic powder, ½ teaspoon ground black pepper, ½ teaspoon chili powder, ½ teaspoon dried parsley flakes
Place the seasoned potato wedges into the air fryer basket.
Reduce the heat to 380°F and cook for 20 minutes, flipping the wedges halfway through.
Serve immediately with grated Parmesan cheese and your favorite dipping sauces.
