This bruschetta chicken pasta is so easy to make--all you need are simple ingredients, a bit of prep, and 25 minutes to cook. The mix of angel hair pasta, chicken breast, and fresh tomatoes is unbeatable!

Ingredients

  • 1 pound angel hair pasta
  • 1 pound roma tomatoes diced
  • 1 small shallot minced (or ¼ red onion)
  • 2 cloves garlic minced
  • 3 tablespoons chopped basil
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil divided
  • salt and pepper to taste

  • ¾ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Balsamic glaze to serve
  • grated Parmesan cheese to serve

Instructions

  • Boil the pasta to al dente according to package directions. Drain the pasta and return it to the pot. Then, toss with some olive oil to keep it from sticking together.

  • In a bowl, combine the tomatoes, shallot, garlic, basil, balsamic vinegar, 1 tablespoon olive oil, salt, and pepper. Set aside.

  • Season the chicken with salt, Italian seasoning, onion powder, and pepper.

  • Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Once heated, add in the chicken and sauté for a few minutes on each side until well browned on the edges and cooked through. Set aside on a plate to cool for 5 minutes. Then, slice into strips.

  • Add the bruschetta mixture to the skillet and cook for a minute or two until heated through.

  • Add the pasta to the skillet and toss to combine with the bruschetta.

  • Top with the chicken, a drizzle of balsamic glaze, and parmesan cheese.
