Slice the English muffin in half and toast in a toaster.
1 English muffin
Pour the egg white into a microwave-safe bowl (approximately the size of your muffin) and microwave for approximately 1 minute 20 seconds or cook to desired consistency on the stovetop. (If using herbs, salt, and pepper, sprinkle them into the egg before cooking. I used Herbs of Provence).
1 egg white, herbs, salt and pepper to taste
Assemble the sandwich by laying the cooked egg white, Canadian bacon, and cheese on the bottom half of the English muffin. Top with the other muffin half. For an extra-tasty sandwich wrap in foil and broil for an additional 3 minutes right before serving. Handle with care.
1 slice Canadian bacon, 1 slice white cheddar cheese
