- 2 pounds red potatoes* no need to peel, just wash
- 1 medium red onion diced
- 1 tablespoon garlic minced
- ½ cup beef stock
- ⅓ cup white wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon granulated sugar
- ½ cup chopped parsley
- 2 tablespoons olive oil
- salt and pepper to taste
- 4 slices bacon cooked and chopped
*Red potatoes are perfect for this dish. I find waxier potatoes are better than starchy potatoes like Russets or Yukon Gold which tend to fall apart when tossed.
