Layered Margarita Popsicles (Alcoholic)

There's nothing more refreshing on a hot summer day than a fruity margarita--except maybe Layered Margarita Popsicles! These even more refreshing alcoholic popsicles are the perfect way to cool off in the sun. Made with three flavors: strawberry, peach, and lime, they are a fun treat, perfect for Cinco de Mayo!

Ingredients

For the Strawberry Section

  • 4 strawberries blended in a food processor to create very small pieces
  • 1 cup strawberry juice blend Naked brand Berry Blast recommended
  • 1 tablespoon tequila Camarena Tequila recommended
  • 1 tablespoon agave nectar
  • ½ tablespoon fresh lime juice

For the White Peach Section

  • 1 white peach blended in a food processor to create very small pieces
  • 1 cup lemon-lime soda such as Diet Sierra Mist
  • 1 tablespoon tequila Camarena Tequila recommended
  • 1 tablespoon agave nectar
  • ½ tablespoon fresh lime juice

For the Lime Section

  • 3 tablespoons frozen limeade concentrate
  • 1 cup water
  • ½ tablespoon agave nectar
  • 1 tablespoon tequila Camarena Tequila recommended

Instructions

  • Combine only the liquid ingredients for each section in 3 separate cups or containers. Do not mix in the blended strawberries or peach.
    1 cup strawberry juice blend, 1 tablespoon tequila, 1 tablespoon agave nectar, ½ tablespoon fresh lime juice, 1 cup lemon-lime soda, 1 tablespoon tequila, 1 tablespoon agave nectar, ½ tablespoon fresh lime juice, 3 tablespoons frozen limeade concentrate, 1 cup water, ½ tablespoon agave nectar, 1 tablespoon tequila
  • Spoon ⅙ of strawberries into each popsicle mold. Pour ⅙ of strawberry margarita mixture into each popsicle mold, pouring to about ⅓ of the way up the popsicle mold. Add popsicle sticks and allow this section to freeze for at least 2 hours before proceeding to the next section.

  • After the strawberry section is frozen, spoon ⅙ of the fresh peaches into each mold. Pour ⅙ of the peach margarita mixture into each mold; now the molds will be filled about ⅔ of the way up. Allow this section to freeze for at least 2 hours before proceeding to the final section.
    1 white peach
  • After the peach section has frozen, top with lime margarita mixture. If desired, cut small lime pieces to place at the top of each popsicle. Freeze for at least 2 hours or until completely frozen through.
  • When you're ready to serve the popsicles, dip the mold halfway into lukewarm water for about 30 seconds to loosen the pops, then gently remove and enjoy.

Notes

  • Stick to one teaspoon of tequila per popsicle layer. If you use more than they simply won't freeze. The stick will slide right out, and you'll have to dig all that good stuff out with a spoon.
