Ingredients

For the Caesar Dressing

  • ½ cup plain Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice from 1 lemon
  • 1 tablespoon olive oil
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste
  • ½ teaspoon freshly ground black pepper
  • 1 clove garlic minced
  • ¼ teaspoon kosher salt or to taste

For Assembly

  • 6 cups tightly packed chopped romaine lettuce
  • 1 pound cooked boneless, skinless chicken breasts cut into strips
  • ½ cup shaved Parmesan cheese
  • 1 cup seasoned croutons

Instructions

  • In a small mixing bowl, combine the dressing ingredients. Whisk until well combined, then cover and chill until ready to use.

  • In a large bowl, toss lettuce together with half of the prepared dressing to coat.
