Ingredients

  • 1 large cucumber sliced
  • 8 red radishes thinly sliced
  • 2 Granny Smith Apples sliced
  • 1/4 cup real mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons fresh lemon juice one lemon juiced
  • 1/8 cup fresh parsley finely chopped
  • salt and pepper to taste

Instructions

  • In a large bowl, toss together the cucumber, radishes, and apples.
  • In a separate small bowl, whisk together the mayonnaise, vinegar, lemon juice, parsley, and salt and pepper.
  • Pour the dressing on top of the cucumber mixture and toss until fully combined.
