Equipment

  • Kitchen Scale (optional)

Ingredients

  • 2 tbsp salted butter 28g (¼ stick)
  • ½ cup dark brown sugar 107g
  • ¼ cup dark rum 57g
  • 16 oz. strawberries 454g, hulled and sliced in half
  • 1 pint vanilla bean ice cream 473, for serving

Instructions

  • Heat the butter, sugar, and rum in a medium skillet over medium-low heat. Cook for 4-6 minutes, stirring while you cook. If the mixture catches on fire, turn off the heat until flame subsides, then continue cooking.
2 tbsp salted butter, ½ cup dark brown sugar, ¼ cup dark rum
  • Add the strawberries, stirring to make sure they are all coated, until warmed through, about 2-3 minutes.
    16 oz. strawberries
  • Serve over ice cream.
1 pint vanilla bean ice cream

Notes

  • For the best flavor and texture, use fresh strawberries.
  • Try using other berries, apples, or even peaches.
  • Prepare just before serving or at most an hour or two beforehand.
  • Brown sugar is best, but in a bind, white sugar also works.
  • Use strawberries that are firm and deep red.
  • Store leftovers for up to 1 day.
