Ingredients

For the Salad

  • 12 ounces dry rotini pasta (¾ pound)
  • 4 cups chopped romaine lettuce rinsed and dried (from about 2 heads)
  • 4 cups cubed cooked chicken (from about 3 chicken breasts)
  • 1 cup croutons store-bought or homemade
  • ½ cup cooked bacon crumbles
  • ½ cup freshly shredded Parmigiano Reggiano cheese

For the Dressing

  • 1 cup mayonnaise

  • 3 tablespoons freshly squeezed lemon juice (from 1½ lemons)
  • 3 cloves garlic minced
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon anchovy paste
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  • In a large pot of salted water, cook the rotini pasta to al dente. Rinse cooked pasta with cold water.

  • In a large bowl, combine all salad ingredients including the cooked pasta. Set aside for now.

  • In a medium bowl, stir together all dressing ingredients. Stir until well mixed.

  • Pour dressing over salad ingredients and toss well to mix.

Notes

Storage: Store chicken Caesar pasta salad in an airtight container in the refrigerator for up to 3 days.
