For the Walnut Topping

  • cup unsalted butter 75 grams (⅔ stick)
  • cup all-purpose flour 40 grams
  • ½ cup dark brown sugar 107 grams
  • ½ cup chopped walnuts 57 grams

For Serving

Instructions

  • Preheat oven to 425°F.
  • In a medium bowl, stir together the sugar, cinnamon, and nutmeg.
    1½ cups granulated sugar, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg
  • In a large bowl, beat together eggs, evaporated milk, and vanilla with a whisk.
    2 large eggs, 12 ounces evaporated milk, 1 teaspoon pure vanilla extract
  • Pour the sugar mixture into the egg mixture and whisk to combine.
  • Stir in the mashed sweet potatoes potatoes and beat until combine. The mixture will be thin.
    1½ cups mashed cooked sweet potatoes
  • Place pie shell into pie pan and press to seal. Use a fork to prick the bottom and sides.
    1 9-inch refrigerated pie crust
  • Pour sweet potato mixture into unbaked pie shell.
  • Bake on center rack for 15 minutes.
  • Reduce the oven temperature to 350°F and bake for an additional 30 minutes.
  • While the pie is baking, make your walnut topping. In a small bowl, combine all ingredients for the walnut topping. Use your fingers to create a crumble with all the ingredients. They don't need to be smooth. Set aside.
    ⅓ cup unsalted butter, ⅓ cup all-purpose flour, ½ cup dark brown sugar, ½ cup chopped walnuts
  • Remove pie from the oven and sprinkle with topping.
  • Bake 15 minutes or until topping is golden brown.
  • Allow to cool and serve with ice cream or whipped cream for serving.
