Blueberry Baked Oatmeal Recipe

Ingredients

  • cups old-fashioned oats 225g
  • ½ cup brown sugar 107g
  • 1 tsp baking powder 4g
  • ¼ tsp allspice
  • 2 cups half and half non dairy also works, 454g, room temperature
  • 2 large eggs 100g, room temperature
  • 2 tbsp salted butter 28g, melted (¼ stick)
  • 1 tbsp lemon juice 14g, from ½ lemon
  • 1 tbsp honey 22g
  • ½ tsp pure vanilla extract 2g
  • 2 cups blueberries* 340g
  • 1 cup chopped pecans 114g
  • cinnamon pinch, optional

For Serving (Optional)

  • honey
  • maple syrup
  • fresh fruit
  • yogurt

Instructions

  • Preheat oven to 375°F. Spray an 8x8-inch baking pan with nonstick spray. Set aside.
  • In a large bowl, whisk the oats, brown sugar, baking powder, and allspice together.

  • In another bowl, mix the half and half, eggs, butter, lemon juice, honey, and vanilla extract together until well combined.

  • Pour the milk mixture into the oats. Mix well.
  • Gently fold in the blueberries and pecans. For an even texture, make sure the ingredients are well mixed before spreading them into the baking dish.

  • Transfer the batter into the prepared baking pan and spread it into an even layer.
  • Bake for 40-45 minutes or until golden brown. Let cool before plating and serving.

Notes

*Instead of blueberries, diced apples, pears, or strawberries are wonderful additions. Delicate berries like raspberries and blackberries could fall apart, so I recommend using 1 cup of blueberries and 1 cup of raspberries or blackberries.
