Ingredients

  • pounds shredded rotisserie chicken fully cooked
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 3 cloves garlic minced
  • 1 yellow onion diced
  • 3 carrots peeled and diced
  • 3 ribs celery diced
  • 30 ounces Great Northern beans drained and rinsed (2 (15-ounce) cans)
  • 2 bay leaves
  • 4 cups baby spinach
  • Kosher salt and freshly ground black pepper to taste

Instructions

  • Place chicken, garlic, onion, carrots, celery, beans, and bay leaves into a large slow cooker. Season with salt and pepper to taste.

  • Stir in chicken broth and 2 cups water. Stir in spinach. Stir until well combined.
