Homemade Brownie Mix Recipe

Why buy from the store when you can make brownie mix at home! Store this in your pantry to make quick and easy (and perfect) brownies year round.

Ingredients

For the Mix

  • 1 cup granulated sugar 200 grams
  • cup unsweetened cocoa powder 28 grams
  • ½ cup All Purpose Flour 68 grams
  • ¾ teaspoon espresso powder 2 grams, optional
  • ¼ teaspoon Baking Powder 1 gram
  • teaspoon kosher salt
  • 1 cup semisweet chocolate chips 170 grams, optional

To Make the Brownies

  • ½ cup vegetable oil 100 grams
  • 2 large eggs 100 grams, room temperature
  • 1 teaspoon pure vanilla extract 4 grams

Instructions

For the Mix

  • In a medium bowl, whisk the sugar, cocoa powder, flour, optional espresso powder, baking powder, and salt together.

  • Add in the chocolate chips, if using, and stir.

  • Transfer the mixture to a jar or Ziplock bag and store until ready to use.

To Make the Brownies

  • Preheat oven to 350°F. Grease an 8x8-inch baking pan and line it with a parchment paper sling.
  • In a large bowl, whisk the oil, eggs, and vanilla extract together.

  • Add in the brownie mix and whisk until just combined.

  • Pour into the prepared pan and bake for 20-25 minutes, until desired doneness is achieved. Bake less for gooey brownies and longer for cakier brownies.

  • Let cool for 10 minutes before removing them from the pan and placing them on a wire rack to cool for another 5-10 minutes before slicing and serving.

Notes

Yield: This recipe yields enough mix to make one 8x8-inch pan of brownies.
  • Try adding ½ cup of nuts, 1 cup chocolate chips (milk, semisweet, dark, or white), 1 cup M&M's, or 1 cup chopped Oreo cookies to the mix!
  • Easily double this recipe to fill a 9x13-inch baking pan. This will make 16 brownies!
  • Nutritional information is for one prepared brownie.
Storage: Store homemade brownie mix in an airtight container or Ziplock bag at room temperature for up to 3 months or in the freezer for up to 6 months.
