If you’re looking for an easy dinner that doesn’t miss out on any flavor, you need to make Crockpot Chicken Fajitas! Spice rubbed chicken breasts are slowly cooked to perfection with peppers and onions in a flavor marinade. While these fajitas may not sizzle, they certainly do satisfy!

Instructions
Combine the soy sauce, chicken broth, lime juice, olive oil, and honey in the crockpot.
¼ cup soy sauce, ¼ cup low-sodium chicken broth, Juice of 1 lime, 2 tablespoons olive oil, 1 tablespoon honey
Add the sliced peppers and onions to the slow cooker, tossing to coat in the marinade.
3 bell peppers, 1 red onion
In a small bowl, mix together the chili powder, cumin, salt, onion powder, and garlic powder. Rub the spice mixture onto both sides of each chicken breast. Place the chicken breasts on top of the veggies in the crockpot.
2 teaspoons chili powder, 1 teaspoon ground cumin, ½ teaspoon onion powder, ½ teaspoon garlic powder, 2 pounds boneless, skinless chicken breasts, ¾ teaspoon salt
Cook on high for 3-4 hours or on low for 4-5 hours.
Once the chicken is cooked through, remove it from the crockpot, place onto a cutting board, and slice. Return the sliced chicken to the crockpot and mix it in with the peppers and onions. Alternatively, use 2 forks to shred the chicken directly in the crockpot.
Serve the chicken, peppers, and onions in tortillas with your favorite toppings.
