Cheeseburger Dip

Ingredients

  • ¾ lb. lean ground beef use ground turkey, chicken, or pork for a lighter option, or use crumbled bacon for a smoky flavor.
  • 2 cloves garlic
  • ½ cup chopped onion
  • 16 oz. low-fat cream cheese (2 bricks)
  • 1 cup low-fat sour cream
  • ½ cup light mayo
  • 1 cup freshly shredded cheddar cheese
  • 1 cup freshly shredded Swiss cheese
  • 1 cup bacon crumbles fully cooked
  • ¼ cup chopped bread and butter pickles optional
  • ½ cup chopped cilantro
  • ¾ cup chopped cherry tomatoes or pico de gallo
  • ketchup and mustard optional, for garnish

Instructions

  • Preheat oven to 350°F. Spray a 2-quart baking dish with nonstick spray. Set aside.
  • Brown the ground beef and garlic in a medium skillet set over medium-high heat. Crumble as you brown. About halfway through, add in the onion and stir to combine. When the beef is fully cooked and the onion is translucent and fragrant, drain of any excess oil and set aside.

  • In a high powered blender, combine cream cheese, sour cream, mayo, and both cheeses. Pulse until combined.

  • Pour cream cheese mixture into a large bowl and stir in the beef, bacon, pickles, cilantro, and tomatoes.

  • Pour mixture into a prepared baking dish. Sprinkle with more cheese if desired.
  • Bake for 20 minutes or until cheese is bubbly and melty.
  • Serve hot, garnished with ketchup and mustard, with tortilla chips, crackers, or fresh veggies for dipping.

Notes

  • I like to use lean beef (85-90%), but you use any beef since we're draining off the excess fat.
  • Make the dip in a slow cooker by layering the ingredients and cooking on low heat for a few hours.
