Ingredients

  • 16 oz. refried beans store-bought or homemade (1 can)
  • 4 oz. diced green chiles (1 small can)
  • 1 cup sour cream
  • 2 tbsp taco seasoning store-bought or homemade
  • 2 avocados
  • 2 tbsp chopped fresh cilantro
  • ½ jalapeño pepper diced (optional)
  • ½ lime juiced
  • ½ tsp kosher salt
  • 1 cup salsa use store-bought, homemade, diced tomatoes or pico de gallo
  • 1 cup shredded romaine lettuce
  • 1 cup shredded Mexican cheese
  • 4 oz. sliced black olives drained (1 small can), green or kalamata also work
  • 2 green onions sliced, or use chives
  • tortilla chips optional, for serving

Instructions

  • Mix the refried beans and green chilis together in a large bowl. Spread the mixture out evenly in the bottom of a 9x9 inch baking dish.

  • In a medium bowl, mix the sour cream and taco seasoning together. Spread it out over the bean layer.

  • In a large bowl, mash the avocados. Stir in the cilantro, jalapeño, lime juice, and salt. Spread over the sour cream.

  • Spread out the salsa, then romaine, cheese, olives, and green onions. Cover and chill until ready to serve.
