Easy Weight Watchers Lasagna Recipe

This lasagna recipe is a must-make. If you’re a true pasta and cheese lover like I am, you will love this recipe. I’ve created a rich and thick sauce that’s loaded with diced veggies like carrots, celery, and zucchini, that I’ve sauteed and simmered along with ground beef, diced tomatoes, and tomato paste.

Instead of layering it all with lasagna noodles and cheese, I’ve broken the lasagna sheets into pieces and cooked them in the sauce. I throw it all together in a dish, top it with a layer of low-fat cheese, and then I broil it so the cheese is hot and bubbly. The result is everything you love about classic lasagna, a rich, savory sauce, tender lasagna noodles, and gooey cheese, but in a lighter, easier, yet equally satisfying dish.

Tips for Beginners

  • Any pasta shape works. I chose to use no-cook lasagna noodles, which cook up quickly in the sauce. If you use a different shape that needs to be cooked, I suggest you cook it before adding it to the sauce.
  • Non-fat cheese. For this recipe, non-fat cheese is the best option to keep the Weight Watchers points in check. If you choose a different cheese, it may affect the number of points.
  • Marinara sauce is an option. If you’re looking to save a bit of time, you can use a store-bought marinara sauce and add the cooked meat to it. Read the label to make sure it doesn’t have any added sugar.

Ingredients 

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 carrots diced
  • 2 ribs celery diced
  • 1 zucchini peeled and diced
  • ½ sweet yellow onion diced
  • 3 cloves garlic minced
  • 1 tbsp chopped fresh thyme
  • 1 lb. 90% lean ground beef or chicken/turkey
  • 14.5 oz. diced tomatoes undrained (1 can)
  • 1 cup water
  • ¼ cup tomato paste
  • 5 Barilla Oven-Ready lasagna sheets broken roughly into 8-12 pieces
  • 1 cup mozzarella pearls optional
  • cups non-fat shredded Italian cheese blend
  • ½ cup chopped fresh basil plus more for serving

Instructions 

  • In a large, oven-proof skillet, heat the oil and butter over medium-high heat. Sauté the carrots and celery for 3 minutes, stirring occasionally.
    1 tbsp olive oil, 1 tbsp unsalted butter, 2 carrots, 2 ribs celery
  • Add the zucchini and diced onion, and sauté approximately 3-4 minutes or until onions are translucent and zucchini has softened.
    1 zucchini, ½ sweet yellow onion
  • Add the garlic and thyme. Stir, and cook for 30 seconds.
    3 cloves garlic , 1 tbsp chopped fresh thyme
  • Add the beef and cook 2-4 minutes or until beef has browned. Stir to break up any chunks of meat.
    1 lb. 90% lean ground beef
  • Stir in tomatoes, 1 cup water, and tomato paste.
    14.5 oz. diced tomatoes, 1 cup water, ¼ cup tomato paste
  • Season, to taste, with kosher salt and freshly ground black pepper.
  • Bring the mixture to boil.
  • Add the pasta pieces and mozzarella pearls and stir.
    5 Barilla Oven-Ready lasagna sheets, 1 cup mozzarella pearls
  • Reduce the heat to medium-low and cook, covered 10 minutes.
  • Remove lid and cook 5-10 minutes or until sauce has thickened.
  • Turn oven to broil.
  • Top the beef mixture with the Italian cheese blend and broil just until the cheese has melted and the top is golden brown.
    1½ cups non-fat shredded Italian cheese blend
  • Remove from the oven and sprinkle with chopped fresh basil. Serve and enjoy!

How to Store

Store leftovers in an airtight container in the fridge for 2-3 days. Or freeze for up to 3 months. Thaw in the fridge overnight and reheat in the oven or microwave.

I ran this recipe through the WW site and it’s coming back as 11 points per serving. The only way I can get it down to 8 is by removing the butter and ground turkey. I must be doing something wrong. It looks AMAZING though!

Hi, this recipe was originally published in 2018, so it uses the points calculator from that time period. I believe with the updated calculator, it may come out to 9 points per serving!

I have not tried it yet. I can not find what the serving size is for the 8 points. Even under the nutritional information it does not say for how much. Can anyone help me with this?

Question – When I put the nutrition info listed into the WW app, I’m coming up with 15 points. I’m on the blue plan. I’m very new to WW, so I’m sure there’s something I’m not doing right.

I love this recipe! Delicious, but I’m getting 15 points as well when I pull all of the nutritional information into my WW app! No matter how many servings I changed it it, it still said 15! When you only get 23 points a day that’s just too much! Delicious though!
