Easy Cake Mix Cookies
With this one recipe, I can turn any box of cake mix into soft, fluffy, cakey cookies. There are so many flavor variations to try, it’s like having an endless list of cake mix cookie recipes on hand! I love how creative you can get with these. Start with your preferred flavor of cake mix (chocolate, yellow, vanilla, strawberry, etc), and add chocolate chips, caramel, powdered sugar, flavor extracts, food coloring, nuts, candies, cinnamon & other spices—the sky is the limit!
Tips for Beginners
- If your dough seems sticky, try adding a bit of all-purpose flour.
- If your cookies are spreading too thin in the oven, chill the tray of scooped cookie dough in the fridge for 15 minutes before baking.
- Sift the dry cake mix to remove clumps, and add a little more airiness to the texture.
- If you feel like your cookies still spread too much, come out thin and flat, or are too crispy, try adding more all-purpose flour into the mix next time (1 tablespoon at a time). This thickens the dough and make it less sticky as well.

Hi Lori, we’ve noticed a lot of cake companies have been reducing the sizes of their boxed mixes lately, which can totally mess with this recipe. Make sure you’re using a 15.25-ounce box, not a 13.25- or 14.25-ounce box!
I used chocolate cake, added a packet of instant banana pudding mix and peanut butter chips.. the banana flavor isn’t very strong, but it’s there.

I made this recipe using a white cake mix, 2 eggs and coconut oil. I added 3/4 cop walnut pieces and 3/4 cup chocolate chips. It made amazing light cookies. I am very pleased.
I always substitute unsweetened applesauce for the oil when baking a cake. This lowers the fat and makes it healthier. Can I do the same for these cookies?

We made these with a Fudge Cake recipe by Betty Crocker. We used 1/2 butter and 1/2 oil to a total of 1/2 cup. We added semisweet chocolate chips. Delicious!!
The strawberry batter cake mix was good with white chocolate
The chocolate mix recipe is missing something. I made them topped with M&M’s. BUT, the Funfetti mix cookies are YUM! I will be making them over and over!
