Easy Grilled Peach Summer Salad Recipe

Make the most of the season’s fresh produce with this delicious peach and arugula salad. Dressed in a honey balsamic vinaigrette, it’s the perfect mix of sweet, salty, and tangy. It’s one of our favorite summer salads because it’s so fresh and fruity. For other refreshing salad options, this colorful confetti corn salad and creamy broccoli salad are a must-try too.

This is a great side dish, but you can easily serve a larger portion for a filling meal. Add some protein like shredded chicken or chickpeas for a delicious hearty salad.

Ingredients 

For the Peach Salad

  • 6 large yellow peaches ripe and firm
  • 5 ounces baby arugula baby spinach or kale also work
  • 1 cup pomegranate seeds
  • 1 cup blueberries
  • 2 tablespoons pine nuts roasted
  • 1/2 cup crumbled feta
  • 1 teaspoon oregano

For the Balsamic Dressing

  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 3 tablespoons extra virgin olive oil
  • Pinch of salt

Instructions 

  • Wash peaches, Cut them in half, remove pits, and then quarter each half into 3 wedges.

  • In a large bowl add arugula, pomegranate, and blueberries.
    5 ounces baby arugula, 1 cup pomegranate seeds, 1 cup blueberries
  • Heat a grilled pan on medium heat. Place peaches on the grill and grill both sides for about 2-3 minutes. Add to the salad bowl and sprinkle pine nuts, feta, and oregano on top.

  • In a small bowl stir together balsamic vinegar, honey, olive oil, and salt. Pour on the salad individually or just before serving.

  • This salad can be served immediately or stored in the refrigerator until ready to serve.

  • If eating as a main dish, this recipe serves 2 people. If serving as a side salad, this recipe serves 6 people. 
  • Don’t grill the peaches for too long, as they can get too soft and jammy. They just need a few minutes on each side.

How to Make Grilled Peaches & Feta Salad Step by Step

Prepare the peaches: Remove the stones from 6 large peaches and cut them into wedges.

Combine the salad ingredients: Place 5 ounces of arugula, 1 cup of pomegranate seeds, and 1 cup of blueberries into a bowl.

Grill the peaches: Grill the peaches on each side.

Add the peaches to the salad: Add the peaches to the bowl with greens and fruit and top with 2 tablespoons roasted pine nuts, 1/2 cup crumbled feta, and 1 teaspoon of oregano.

Prepare the dressing: Mix together 1 tablespoon balsamic vinegar, 1 tablespoon honey, 3 tablespoons extra virgin olive oil, and a pinch of salt.

Combine the salad and the dressing: Pour the dressing over the salad to serve and enjoy.

Storage

Store uneaten salad in the fridge for up to 3 days. It is best to store the salad without the dressing, or it will get soggy.

This grilled peach salad can be made a day ahead of time and stored in the fridge in an airtight container. The dressing will keep well in the fridge for a couple of weeks in a sealed bottle. It’s best not to add the dressing to the salad until you are ready to serve so that the arugula doesn’t wilt.
