Grilled Ribeye is an easy dinner that always satisfies. First, I marinate the steaks in a simple mix of olive oil, garlic, and rosemary, and then grill them to tender, juicy perfection. I like my steaks medium, but you can cook to your desired level of doneness. When made just right, this cut of meat always turns out deliciously tender and flavorful, perfect for a date night in with my husband.

I find what makes these Grilled Ribeye Steaks stand out from the rest is the marinade. It’s a very simple combination of olive oil, garlic, and rosemary, but the garlic and rosemary work in tandem to add a flavorful and aromatic element to the meat, enhancing the natural flavors rather than overpowering them. Plus, the olive oil helps make the steaks even more tender than they already are.
The marinade comes together in just minutes, and once the steaks marinate for an hour, it’s just 10 minutes until I can get the steak on the table. I love making this for my husband and me to enjoy together on a Saturday evening after the boys are tucked in for the night. It’s a restaurant-quality meal that comes together quickly and easily. If I’m preparing this for a dinner party with friends or family, I’ll double or triple the recipe. Depending on the time of year, I’ll pair the steak with seasonal fresh produce and finish the meal with a decadent dessert.
Tips for Beginners
- Trim any excess exterior fat from the steaks. This will help improve their texture and reduce the probability of them catching on fire.
- Let the steaks come to room temperature. The steaks will cook more evenly if you cook them from room temperature.
- Season generously.Pat a generous amount of seasoning into the meat, as some will fall off while it cooks. The seasoning will bring out the natural flavors of the meat.
- Remove the steaks from the grill just before they reach your desired doneness. You don’t want to overcook the steaks; they’ll continue to cook as they rest.
- For a different flavor profile. Try this steak marinade.
- To prepare in the oven. Follow the recipe through step 5; preheat the oven to 275°F, place a wire rack on a rimmed baking sheet, and place the steak on top. Bake for 15 minutes, then transfer to a cast-iron skillet and sear in 1 tablespoon of oil for 2 minutes per side, or until the steaks reach your desired level of doneness.

Becky’s Tips
- Trim exterior fat to prevent the steak from catching on fire.

- Reheat over the grill or in a 300°F oven.

How to Make Grilled Ribeye Steaks Step by Step

Prepare the marinade: In a small dish, combine ¼ cup olive oil, 4 minced cloves of garlic, and 1 tsp of chopped fresh rosemary.

Marinate the steaks: Place 2 ribeye steaks in a shallow bowl or casserole dish and pour the olive oil mixture over them. Turn the steak over to coat it well on both sides and let it marinate for at least 1 hour.
Prep the steaks and grill: Take the steaks out of the fridge 30 minutes before grilling to bring them to room temperature. Preheat the grill to medium-high heat (400-450°F). Season the steak well with 1 tsp of kosher salt and ½ tsp of pepper.

Grill the steaks: Grill the steaks for about 10 minutes, flipping them over halfway through for medium rare. Continue grilling for a couple of minutes longer, if desired, leaving the grill open. After removing from the grill, let the steaks rest for 10 minutes before serving so the juices can redistribute.

Serve: Slice against the grain for the most tender meat and serve the steaks with your favorite sides. Enjoy.
How to Store
Store leftover grilled ribeye in an airtight container in the refrigerator for up to 4 days. Reheat on the grill until warmed through, about 5 minutes, or bake in a 300°F oven until warmed through, about 8-10 minutes.
Freeze grilled ribeye in an airtight container for up to 3 months. Let thaw overnight in the refrigerator before reheating.

Serving Suggestions
I find grilled ribeye steaks just beg to be served with potatoes. I love all potato recipes but find these smashed potatoes complement the flavors of the steak well. If I don’t have much time to prepare, these instant pot mashed potatoes come together quite quickly. And, depending on the time of year and which vegetables are in season, I’ll add grilled zucchini or air fryer asparagus for a simple and delicious meal.
This recipe is perfect for two people, which makes it an ideal date night meal. If I’m hosting a dinner, I’ll double or triple the recipe.
