I don’t know about you guys, but King Ranch Chicken Casserole has always been one of my favorite casserole indulgences. All that CHEESE, chicken, spice, and tortillas.
It’s such great comfort food, and it’s SO easy to throw together. I love the flavors so much, I even made a King Ranch Chicken Mac and Cheese!
So when thinking about Super Bowl appetizers (because there are never enough of them!), I wanted to make something new and fun. I instantly thought that King Ranch Chicken Rotel Dip would be the perfect thing!
Turns out that those comforting casserole flavors lend themselves just as easily to an awesome dip, and it’s just as easy to make. What’s not to love?

King Ranch Chicken Dip Ingredients
It’s no secret that my favorite way to spice up SO many of my favorite party foods is with Old El Paso! I used their Taco Seasoning, Flour Tortillas, and Green Chiles (my FAVE) for this recipe and they were the perfect (easy) addition. I’m addicted and I don’t care who knows it!
This King Ranch Chicken Rotel Dip has so many amazing flavors, and it’s all thanks to the best ingredients. Here’s what’s in the dip:
- Shredded Chicken
- Cream Cheese
- Rotel Tomatoes
- Sour Cream
- Green Chiles
- Cheddar Cheese
- Onion
- Green Pepper
- Taco Seasoning
- Cilantro
- Tortillas
Yup, this dip is LOADED with ingredients and they all blend perfectly into the most delicious dip recipe. Serve it with tortilla chips and it will be gone in a flash!

How to Make King Ranch Chicken Rotel Dip
Another easy dip recipe that you can make any time. This King Ranch Chicken Rotel Dip is the perfect blend of cheese, Rotel tomatoes, chicken, and so much more. Follow the simple recipe and you’re in business!

- Cut tortillas into 1 inch squares
- Mix together all ingredients, except for tortillas and a 1/2 cup of the shredded cheese
- Cover the bottom of a casserole dish with tortillas squares (use about 1/3 of them)
- Fill in with 1/2 of the dip mixture, set another layer of tortillas (another 1/3), fill in with the rest of the dip mixture, then top with a final layer of tortillas
- Sprinkle the rest of the shredded cheese (1/2 cup) on top
- Bake uncovered at 350°F for 25-30 minutes
This easy and tasty dip recipe is sure to be a crowd pleaser! Serve with chips and enjoy.
I have a lot of favorite dips, but this King Ranch Chicken Rotel Dip is right up there with all the winners. It’s such a fun and new twist on one of my very favorite meals, and I hope you love it as much as we do! It’s our new favorite way to tailgate, especially for the Super Bowl!
