- Fully assembled salad: Once tossed, leftovers keep covered in the fridge for up to 3 days, and honestly, it just gets better with time. This cucumber salad is excellent, it tastes like health salad which is why I added sliced carrots and celery. The cucumbers I used are from my daughter’s garden so I peeled and deceded them. Sooo yummy!!!
