- 1 cup water
- ½ teaspoon kosher salt
- ¼ cup half and half
- 4 tablespoons unsalted butter

- Add the sweet potatoes, water, and salt to the Instant Pot.2 pounds sweet potatoes, 1 cup water, ½ teaspoon kosher salt
- Attach the lid and ensure the valve is in the “sealing” position. Set the Instant Pot to Pressure Cook – Manual for 12 minutes.
- Once the Instant Pot has finished cooking, release the pressure manually by switching the valve to the “venting” position – but be careful, it may splatter.
- Drain the potatoes and return them to the Instant Pot. Add the half and half and butter.¼ cup half and half, 4 tablespoons unsalted butter
- Use a potato masher or immersion blender to process the potatoes to your desired consistency.
