Crockpot Potato Soup is an easy way to make Healthy Potato Soup for winter meals. This Loaded Potato Soup recipe is one of our favorites! This healthy version is super flavorful and simple.
Saute carrots and onion until softened.
Saute garlic until soft and fragrant. Prepare crockpot and add potatoes and chicken broth.
Add the carrot mixture and cook.
Once cooked use a potato masher to mash to your liking. Stir in spices, cheese, and half and half.
Cook until melted and heated through. Serve hot when ready. Top with favorite toppings. Enjoy!
