Seasoned ground beef, refried beans, cheese, rice, and salsa are loaded into flour tortillas to make these tasty beef burritos for a quick meal. I love to make these for an easy grab and go lunch on a busy weekend. My kids can’t get enough.

What’s in This Beef Burrito Recipe?

If you ever ask Henry what he wants to eat, chances are he will respond “burritos with beef and cheese!”. He doesn’t let me add anything else, but I promise these other ingredients make the recipe even better. Still simple, and so delicious.

  • Ground Beef: We prefer to use lean ground beef (90-95% lean) for less greasy burritos. If using a fattier beef, you will want to drain off some of the fat.
  • Onion: Yellow onion adds an earthy and sweet flavor to the meat.
  • Taco Seasoning: Adds that classic Mexican spice to the meat.
  • Cilantro: Adds a pop of freshness to the meat.
  • Tortillas: We love burrito-sized flour tortillas, but you can use smaller tortillas for mini burritos, or try corn or cassava for a different flavor.
  • Refried Beans: The glue that holds these burritos together and helps bulk up the filling.
  • Cheese: We like a classic Mexican cheese blend, but you can use any cheese your heart desires.
  • Rice: Cooked rice helps to bulk up these burritos. You can make the rice up to a day in advance to save time.

  • Preheat oven to 375°F. Line a baking sheet with parchment paper. Set aside.
  • Add the beef and onion to a large skillet set over medium-high heat. Cook, breaking the beef apart with a spoon, until browned and no longer pink. Add in the taco seasoning and cook for another minute. Stir in the cilantro.

  • Place a tortilla on your work surface. Spread on some refried beans and top with rice, beef mixture, cheese, and salsa. Wrap tightly and place on the parchment lined baking sheet. Repeat with the remaining burritos.

  • Bake for 5-10 minutes until the cheese has melted and the burrito is slightly crispy. Serve with your favorite condiments.

  • To melt the cheese without crisping up the tortilla, wrap the burritos in foil before baking.
  • Depending on how full you stuff your burritos, you may need 8 tortillas.

How to Make This Beef Burrito Recipe Step by Step

Assemble the Burritos: Place 1 burrito-sized tortilla on your work surface. Spread on about ⅓ cup of refried beans, then top with ⅓ cup of cooked rice, ⅙ of the beef mixture, ¼ cup of cheese, and ⅙ cup of salsa. Tightly wrap the tortillas around the filling, and place the finished burrito on the parchment-lined baking sheet. Repeat with the remaining burritos.

Bake the Burritos: Bake the beef burritos for 5-10 minutes, until the cheese is melted and the tortilla is slightly crispy. Serve with your favorite condiments, like guacamole, sour cream, salsa, or taco sauce.
