Make your favorite steak house side dish at home! These air fryer twice baked potatoes are so easy to make and a perfect accompaniment to any meal.

what you need:

russet potatoes

olive oil

black pepper

kosher salt

heavy cream

unsalted butter

Wash and scrub the potatoes, then pat dry. Use a fork to poke holes in the potato.

Rub all sides with olive oil, salt, and pepper. Place potatoes into the air fryer basket and fry at 400 degrees F for 70 minutes, until the outside is crisp and the inside should be fork tender.

When potatoes are cool enough to handle, carefully cut them in half and scoop out the insides into a bowl.

Add butter, heavy cream, salt and pepper to taste. Use a hand mixer or potato masher to whip the potatoes until light and fluffy, adding more butter and heavy cream if desired.

Divide the mashed potato between the potato skins. Return to the air fryer for 4 minutes at 400 degrees F, until the tops begin to brown.
