I love a good chocolate dipped strawberry. But you know what’s even better? That same amazing taste in the form of a soft brownie.

And you get that hard chocolate layer to top it off! I will definitely be serving these up next Valentine’s Day.

How to Make Strawberry Brownies

This easy brownies recipe is a lot simper than it looks. You start by baking the brownie layer, then make the strawberry filling to add in next, and top it off with the layer of melted chocolate.

You will have to factor in some time for the cooling process while the layers set, but other than that, this is a pretty quick and easy recipe.

How to make chocolate covered strawberry brownies:

  1. Prepare the brownie layer – After properly combing your ingredients, you’ll pour the mixture into a 13×9 inch baking pan. Bake the brownies for 30 minutes at 350°F.
  2. Make the strawberry filling – While the brownies are cooling, combine your ingredients to create the strawberry filling. Spread a layer of it over the brownies once they have cooled. Cover and set in the refrigerator.
  3. Top it off with chocolate – While the brownies set in the refrigerator, melt butter & chocolate chips together and mix well. Let the mixture cool for at least 30 minutes. Then spread a layer of the chocolate on top of the strawberry layer.
  4. Place the brownies back in the refrigerator until everything has set.

Ingredients 

For the Brownies

  • 1 cup all-purpose flour 120 grams
  • ½ teaspoon kosher salt
  • ½ cup salted butter 113 grams, room temperature (1 stick)
  • 1 cup granulated sugar 200 grams
  • 4 large eggs 200 grams, room temperature
  • 16 ounces chocolate syrup 453 grams (1 can), such as Hershey's
  • 1 teaspoon pure vanilla extract 4 grams

For the Strawberry Filling

  • ½ cup salted butter 113 grams, room temperature (1 stick)
  • 1 cup powdered sugar 113 grams
  • ¼ cup strawberry jam 85 grams

For the Topping

  • 10 ounces semisweet chocolate chips 283 grams (1 package)
  • 9 tablespoons unsalted butter 127 grams, cubed (1⅛ sticks)

Instructions 

For the Brownies

  • Preheat oven to 350°F and spray a 13×9-inch baking pan with nonstick spray. Set aside.
  • In a small bowl, whisk the flour and salt together; set aside.
    1 cup all-purpose flour, ½ teaspoon kosher salt
  • In a large bowl, using a hand mixer, beat the butter and sugar together until lighter in color and fluffy, about 2 minutes.
    ½ cup salted butter, 1 cup granulated sugar
  • Add eggs, one-at-a-time. Beat well after each addition.
    4 large eggs
  • Add syrup and vanilla – beat well.
    16 ounces chocolate syrup, 1 teaspoon pure vanilla extract
  • Sprinkle the flour/salt mixture over the chocolate mixture and mix just until no dry flour remains.
  • Pour into the prepared baking pan.
  • Bake for 30 minutes (the brownie top will still appear wet). Transfer brownies to a wire rack to cool completely.

For the Strawberry Filling

  • Cream together softened butter and powdered sugar. Beat until smooth.
    ½ cup salted butter, 1 cup powdered sugar
  • Add strawberry jam and cream together until well incorporated.
    ¼ cup strawberry jam
  • Spread the strawberry over the cooled brownies. Cover and refrigerate until set, about 2 hours.

For the Chocolate Topping

  • Melt the chocolate chips and butter together. Stir until completely blended. Once the chocolate has cooled (at least 30 minutes), spread it over the strawberry layer and place the brownies back in the refrigerator.
    10 ounces semisweet chocolate chips, 9 tablespoons unsalted butter
  • When ready to serve, cut into small bars.

  • If you choose to use unsalted butter, add about ½ teaspoon of kosher salt to the brownies and ¼ teaspoon to the strawberry filling.
  • You can use strawberry jam OR jelly. It’s up to personal preference.
  • You could also use a different flavor of jam or jelly, such as raspberry or blackberry.

How did you cut the brownies in such neat squares. I am wondering how you prevented the chocolate layer from cracking or squishing into the strawberry layer when you applied pressure from a knife.5 stars

Thete has to be something else in the strawberry filling other than butter, ped sugar and strawberry jam. Cream cheese. Whipped cream?
